Baked Feta Meal – Creamy, Tangy & Irresistible

Feta cheese is incredibly versatile — perfect in salads, snacks, hors d’oeuvres… and yes, even as the star of a warm, hearty meal! This baked feta recipe is my go-to when I’m short on time but still want something comforting, flavourful, and satisfying. It’s simple, quick, and you probably already have most of the ingredients at home. Let’s get baking!
Ingredients
1 red onion
½ capsicum (any colour you like)
1 medium tomato
1 block of feta cheese
1–2 jalapeño peppers (optional, depending on your spice preference)
A sprinkle of dried oregano
A few fresh mint leaves (optional, for garnish)
Salt & black pepper
Chili flakes (optional, for an extra kick)
1 tsp olive oil
Instructions
Step 1: Preheat the oven
Set your oven to 180°C (fan mode / eco-convection). While it heats up, let’s prep the veggies.
Step 2: Chop chop
Slice the onion into thin strips
Dice the capsicum and tomato into small cubes (about 1–2 cm)
Slice the jalapeño into rings
If you prefer less heat, remove the seeds
Or skip them altogether if you're spice-sensitive!
Step 3: Layer it up
Grab an oven-safe dish or pan.
Drizzle a teaspoon of olive oil at the bottom
Spread the onion slices evenly
Add the capsicum and jalapeños
Top with the diced tomatoes
Sprinkle some oregano, salt, and pepper
Step 4: Centre stage
Place the block of feta cheese right in the middle of the veggies.
Sprinkle some more oregano, pepper, and a pinch of chili flakes on the feta (if using)
Drizzle a bit more olive oil over everything
Step 5: Bake it!
Pop the dish into the preheated oven for 15–20 minutes, until the feta starts to brown at the edges and everything smells divine.
Ideas
Carefully take it out, garnish with fresh mint, and serve warm with your favourite crusty bread. It’s perfect for scooping up all that soft, melty feta and roasted veg goodness.
