During our unforgettable trip to Italy last year, my husband and I signed up for a cooking class in the heart of Florence. The class wasn’t just about food — it was about experiencing Italy through its flavors. We learned how to craft fresh pasta and, much to my excitement, Tiramisu — a dessert I’ve always adored but never dared to make myself.
That day changed everything. The hands-on guidance, little kitchen tricks, and the joy of assembling this decadent treat made me fall in love with Tiramisu all over again. Once we returned home, I couldn’t wait to recreate the magic — and I’m so excited to share the recipe with you!
📝 Ingredients
2 egg yolks
1½ tablespoons sugar (for yolks)
1 cup high-quality mascarpone cheese (the star of the show!)
2 egg whites
1½ tablespoons sugar (for egg whites)
A strong cup of black coffee (for dipping)
Optional: 2 tablespoons orange juice + a hint of melted chocolate for extra flair
Ladyfinger biscuits (Savoiardi)
Cocoa powder for dusting
Instructions
Step 1: Whipping the Yolks & Mascarpone
Start with the egg yolks and sugar. Whisk them together until the mixture becomes pale, soft, and fluffy. Once combined, gently fold in the mascarpone cheese. The quality of mascarpone is everything here — the better the cheese, the richer and smoother your Tiramisu will taste.
Step 2: Beating the Egg Whites
Clean your beaters thoroughly (this is crucial for stiff peaks!) and start whisking the egg whites. Once they begin to froth, add the sugar slowly while continuing to beat until you get stiff, glossy peaks.
Step 3: Combining the Mixtures
Now, take the yolk and mascarpone mixture and gently fold it into the beaten egg whites, one-third at a time. Patience is key — the airy texture is what gives Tiramisu its signature lightness.
Step 4: Preparing the Coffee Dip
Brew a strong cup of black coffee. I couldn’t resist adding a twist: I mixed in 2 tablespoons of orange juice and a splash of chocolate for a slightly citrusy and indulgent flavor profile.
Step 5: Assembling Your Tiramisu
Dip each ladyfinger briefly into the coffee mixture and arrange them in a single layer in your dish.
Spread half of the mascarpone mixture over the ladyfingers.
Repeat with another coffee-soaked layer of ladyfingers.
Finish with the remaining mascarpone mixture.
Dust the top generously with cocoa powder.
Step 6: Chill & Serve
Refrigerate your Tiramisu for at least 4 hours — the longer the better! This allows the flavors to mingle and the texture to set into that perfect creamy-yet-firm bite.
