Out of Bread? Make This Delicious Kathi Roll Instead!

Ever had one of those mornings where you planned for avocado toast, only to realize you’re out of bread? Fear not! This Indian Kathi roll will be your brunch savior. My twist includes a Laccha Paratha, a fluffy omelet, and a delicious avocado filling. Perfect for when you’re in a pinch or just craving something different!

What you'll need:
  • For the Dough:

    • 1 cup wheat flour

    • 1 tablespoon curd

    • 1 tablespoon oil

    • Water (as needed)

    • 1/2 teaspoon Ajwain (Carom Seeds)

  • For the Filling:

    • 1 medium-sized onion, sliced and soaked in vinegar

    • 1/2 avocado, mashed or diced

    • 1 medium-sized tomato, diced

    • 1 lemon wedge

    • 2 green chilies, chopped

  • For the Omelet:

    • 5 eggs

    • Salt to taste

    • 1 teaspoon red chili powder

Let's start cooking:
Step 1. Prepare the Dough:
  1. Combine wheat flour, curd, oil, and Ajwain in a bowl.

  2. Gradually add water and knead into a soft dough.

  3. Cover and let it rest for 10-15 minutes.

Step 2. Prepare the Filling:
  1. Slice the onion and soak it in vinegar.

  2. Mash or dice the avocado.

  3. Dice the tomato.

  4. Chop the green chilies.

  5. Keep lemon wedge ready for squeezing.

Step 4. Make the Kathi Roll Omelet:
  1. Crack the eggs into a bowl, add salt, and red chili powder. Beat well.

  2. Heat a non-stick pan, pour in the egg mixture.

  3. After a minute, place a Laccha Paratha on top and gently tap the edges to stick it to the omelet.

  4. Once the omelet is slightly white and cooked, flip the paratha-omelet combination.

  5. Cook the other side for about a minute.

  6. Repeat for all the parathas.

Step 5. Assemble the Kathi Roll:
  • With the omelet side up, add your favorite condiments. I used chipotle, garlic sauce, and mayo.

  • Load it up with onion, tomato, green chili, and avocado.

  • Top with lime chili sauce, a small amount of habanero sauce, and spicy salsa.

Tip:

My omelet was quite thick, so I ended up eating this as a taco instead of a roll. If you prefer the traditional roll, keep the omelet layer thin. Enjoy your delicious, versatile Kathi roll or taco!
