Shakshuka Meets Hummus – A Brunch Love Story

You know that feeling when you fall head over heels for a food item, and suddenly it sneaks into every meal? That’s me with hummus right now. Our friends gifted us a jar of homemade hummus (bless them), and let’s just say I’m in full obsession mode.
So, this Sunday morning, I thought—why not pair it with another favorite of mine? Enter Shakshuka, but with an Indian twist! And because it was a lazy Sunday and I wasn’t in the mood for slow-simmered sauces, I brought in a secret time-saver: tomato purée. This is going to be quick, flavorful, and absolutely drool-worthy. Let’s dive in!
Ingredients
2 medium/large eggs
⅓ cup tomato purée (use more for a slightly sweeter taste)
1 green chili (Indian variety, or deseed for less heat)
1 medium onion, thinly sliced
1 large garlic clove, finely chopped or grated
½ tsp coriander powder
⅓ tsp turmeric
½ tsp red chili powder or paprika
4 stems fresh coriander leaves, chopped
1 tbsp butter (or oil of choice)
Salt to taste
Bonus star ingredient: A generous scoop of hummus
Steps to Shakshuka Bliss
Step 1: Prep the Base
Heat butter in a pan. Once melted, add garlic and toss until it loses its raw bite (nobody wants aggressive garlic breath). Add sliced onions and cook, stirring occasionally, until they turn translucent.
Step 2: The Sauce
Sprinkle in the spices—coriander powder, turmeric, chili powder, and salt. Stir well, then pour in the tomato purée. Let this simmer for 3-4 minutes on low-medium heat, allowing the flavors to mingle and become best friends.
Step 3: Crack Those Eggs
Create two small wells in the sauce with a spoon and carefully crack an egg into each. Sprinkle chopped green chili on top (skip if you’re not into the heat). Cover the pan and let it cook for about 4 minutes on low heat—just enough to set the whites while keeping the yolks runny.
Step 4: Hummus Magic
Now, the grand finale! Spread a generous circle of hummus on your plate, gently slide the shakshuka on top, and garnish with the coriander leaves. The creamy hummus meets the rich, spiced eggs—a brunch masterpiece waiting to be devoured.
