This year, I’ve been on a mission to explore my culinary skills, especially when it comes to breakfast. Up until last year, if you had asked me about breakfast, I would have said, “Tea and two biscuits, then straight to lunch.” Not exactly a breakfast enthusiast!
But things have changed. This year, I started making breakfast for my partner, and now I look forward to trying something new every morning. I try not to repeat dishes. Even if it’s an omelet, I like to mix it up with different variations, experimenting with flavors. My poor husband has become the guinea pig for my new hobby!
Fast forward to today: I woke up not knowing what to make, browsed through a list of over 40 options, and decided on savory pancakes with a half-fry omelet and hollandaise sauce. But, the hollandaise sauce was vetoed, so we ended up with both savory and sweet pancakes! I found this amazing recipe for making pancakes from scratch. Bear in mind, it had been years since I last made pancakes, and that too was with a pancake mix. However, I’m happy to report they turned out really well, so I’m going to share the recipe I found.
PS: The quantity was a bit too much for us, so if you’re looking to make 3-4 normal-sized pancakes, I’d recommend halving the ingredients

· All Purpose Flour
· Baking powder
· Sugar
· Salt
· Milk and butter
· Egg

Now, for the half-fry: it’s also very straightforward. Just crack an egg directly into the pan on low heat. Cover and cook for about 5 minutes until the albumin sets. Covering helps retain moisture and lightly cooks the top layer, keeping the yolk nice and runny when you cut it. Season with some salt and pepper, I also like to add some dried herbs to enhance the flavours so do give it a shot!
