From my search yesterday, I bookmarked this gem of a recipe from Delicious – Mexican Eggs with Potato Hash.
Why did I choose to make this today? Well, I generally like my potatoes in a samosa or fried, and this recipe promised enticingly crispy hashbrowns. My first memory of hashbrowns is from a McDonald’s breakfast. One random day I tried it, and my mind was blown. Since then, I’ve been known to fulfill my hashbrown cravings by either staying up until 7 AM to order them as part of an English breakfast in Bangalore (I was really not a morning person) or making them at 6 AM during the Covid lockdown. So, when I saw this recipe, I knew I had to make it.
Now, the few times I made hashbrowns in the past, it was a more sophisticated and time-consuming process, which is probably why I didn’t make them that often. But this recipe was very straightforward, even though the combined effort was a bit time-consuming. If you have a partner, friends, or family around, get them to help you out!
Let’s talk about the recipe. As I said, it’s pretty straightforward. It originally included beef, so if you eat that, stick to the recipe. If not, feel free to replace it with mushrooms or, like I did, just omit it altogether.
The Ingredients I Used:
- Onion
- Ginger Garlic Paste
- Tomato Puree
- Eggs
- Chipotle Sauce
- Potatoes
- Butter
- Salt
- Pepper
- Fresh Coriander
That’s it!
PS: I used unsalted butter. If you’re doing the same, remember to add salt to the potato mix.
